Rep Power: 0 ![]() | Re: Oatmeal/Bean Cookies Alright...I realize these aren't exactly "health" cookies, but it's definitely a lower-fat version of chocolate chip cookies...and it's my contribution to recipes for now. It's not something to toss in on a cutting diet, but you can handle it when bulking. This recipe cuts a lot of fat, and even adds a very small amount of protein (albeit, bean protein)...but I really like them... 1 ½ cup old fashioned oats 2 cups all-purpose flour ½ tsp baking powder ½ tsp baking soda ½ tsp salt ¾ cup drained white bean, liquid reserved (any will do, ex: northern) 3 tbsp butter 1 cup light brown sugar 2 large eggs 1 tsp pure vanilla extract 1 cup milk chocolate chips Heat oven to 350 degrees. Lightly coat baking sheet with cooking spray. In a blender, process oats until finely ground, but not powdery. Combine with flour, baking powder, baking soda and salt in a bowl. In blender, puree beans and 2 tbsp of liquid reserve until smooth. Combine bean puree, butter, sugar, eggs and vanilla in a separate bowl and beat well. With a mixer on low speed, beat in oat and flour mixture. Fold in chocolate chips. Drop batter by tbsp onto baking sheet. Bake 15 minutes until centers are firm and edges are lightly browned.
