Just think about this:

Most soccer players have large calves. Do you think it's from running out once a week, or nearly every day?

Most rock climbers have fairly muscular upper bodies, despite nearly never weight training (more weight to carry up with you = bad) and they are often in a catabolic state.

Imo, you should be training the same bodypart at least 2x, if not 3x a week.

Edit: Once a week split training has simply been spread too much by magazines and such. People want an easy route out, so they figure dividing up the body parts and training them once a week will help each part grow faster and prevent over training.

As I've heard others say, "stimulate, not annihilate." Just don't completely destroy your muscles each workout, train them 2-3x a week, eat properly, and you'll have nearly no chance of overtraining.

Of course, that leads to several other topics, such as not trying to go near max effort for more than 3 weeks at a time, but I won't go there now.
